B.T.J Sandwich
Bacon•Tofu•Jam

We all need an indulgence sometimes! And this, my yogi friend is nothing less than one decadent indulgence! We make these in our house every new years eve as a tradition & my family is never disappointed!
Ingredients
Bread (I use Ciabatta for a major indulgence!)
Vegan Mayo
Green Onions, chopped
Extra-Firm Tofu (drained, cut into thin strips)
Tempeh Bacon (I buy them pre-packaged into maple strips!)
Jam (I use grape or blackberry, but strawberry & cranberry would be delicious also!)
Directions
•Heat pan on Medium, then toss on the Tempeh strips with a drizzle of olive oil to get them to crisp. Flip when slightly browned to your liking to cook on the other side.
Assemble Sandwiches:
Vegan Mayo&Jam
Green Onions
Tofu
Tempeh Bacon
This salty-sweet sandwich can be paired with your favorite brew or wine, you know, to keep the indulging going! You can balance it out with a hard core yoga practice later!
