Pumpkin Fall Waffles

Talk about the most perfect, warm, cozy & delicious fall breakfast! Is that enough adjectives for you? Are you convinced?? I hope so!

I had some pumpkin puree that I had saved in the fridge + I wanted to make a warm and delicous breakfast for my little guy & I. So what did I come up with? This!

Pumpkin Fall Waffles

Ingredients:

1 1/2 C Oats - Blended into flour (You can easily use a blender or food processor to make your own oat flour! It is fabulous!)

1/4 C Cashwes or Pecans (I used Cashews - I adore them!)

1 tsp Baking Powder

1/4 tsp Salt

1/2 tsp pumpkin spice

--------------------------

1/2 C Pumpking Puree

1/2 C Almond Milk (Unsweeneted, or Vanilla - your choice!)

1 tbs Maple or Agave Syrup

Coconut Oil for the Waffle Iron

Extra Maple or Agave for topping

Directions:

* Warm up your Waffle Iron & then...

1. Combine oat flour and cashews/pecans into a blender/food processor & blend until it is all combined into a pretty flour.

2. Add the rest of the dry ingredients (baking powder, salt, pumpkin spice) and blend to combine.

3. Transfer the dry mixture into a bowl & add the wet ingredients

4. Mix together to make the batter - It will be thick! Add more Almond Milk if you like your batter thinner =)

5. Cook 'em up, drizzle with some maple syrup & enjoy the taste of FALL!
