Cashew Strawberry & Beet Salad (2 in 1!)

You know when you step into your kitchen, tummy all a-growl, and as if you were a 10 year old boy think to yourself, "We have nothing to eeeeeat."

As a mama of 2, this is when the best & easy creations come to life in my kitchen! I don't love to eat out, and most lunch times I have 2 napping kiddos in the house & no time to run out & shop...so I have to improvise!

((What you will want first is my Handy-Dandy Dressing recipe! I use this dressing recipe as a base for all of my dressings:

1/4 c Vinegar of your choice (I used Apple Cider for these salads & in most light dishes. I use Balsamic or Red Wine Vinegar when I want a richer taste)

2 tbs Olive Oil

1 Minced Garlic Clove

1 tsp Dijon Mustard

1 tbs Maple Syrup or Apple Sauce

Mix & Whisk!))

Get ready for 2 tastiest summer salads you ever laid your taste buds on!

Cashew Strawberry Salad

Ingredients

1 Handful of Strawberries, Sliced

1/2 Apple, Thinly Sliced

1/4 c Quinoa

2 c Baby Spinach

Juice from 1/2 Lemon

2 tsp Agave or Maple Syrup

4 tbs Roughly Chopped Cashews

Handy Dandy Dressing (Above)

Directions

- Wisk together: lemon juice & agave syrup, then stir in cashews & Strawberries.

- In a medium bowl, toss: baby spinach, quinoa, strawberry/cashew mixture & dressing.

- Top with sliced Apple & a few more cashews

...And here is the 2 for 1!

Wash 1 Red & 1 Golden Beet, wrap in Tin Foil & Roast in the oven at 415 degrees for 1 hour. Chop when they're cooled.

Add these beets in place of the strawberries & you have another deilicious & easy summer salad!
