Chickpea "Chicken" Salad

I still remember my husband's goofy grin while I went out on a whim and began to pull out the ingredients for this salad.

As he continued whipping up turkey sandwhiches for him & the kids, I, being the hungry-hungry-vegan with nothing to eat, was scrounging and searching for something I could whip up - and fast!

After poking a little fun at my ingredients & chopping, my husband had nothing left to joke about after taking a bite of this salad!

Ingredients:

1 Can Chickpeas for your "Chicken"

2 Tbs Sunflower Seeds

1/2 Celery Stalk - chopped/diced

1 Small/Medium Sized Carrot - chopped/diced

2 Tbs Vegan Mayo (Optional)

2Tbs Dijon Mustard

Black Pepper (or Red Pepper Flakes to add some spice)

Romaine Lettuce

Tomato

Pita Bread

Directions:

• Drain & Rinse, then Mash up the Chickpeas in a medium-sized bowl with a fork

• Add in Celery & Carrots

• Add Mayo & Mustard, Mix until inorporated well

• Top Mixture onto your choice of bread, or pita with romaine lettuce, tomato & pepper

Pair with some deliciously fruity, infused water, lemonade, or sangria for the perfect Summer pick-me-up!
